
Petite Sirah
Appellation: Central Coast, California
Winemaker’s Tasting Notes:
“We harvested these tiny berries in the early morning and transported the grapes over to the crush pad. A dense, full-bodied red wine, crafted from the coolest Central Coast areas, this Petite Sirah is anything but petite in flavor. Bursting with dark cherry, blackberry and bittersweet espresso notes, it has a creamy mouthfeel derived by aging a portion of the wine in small oak barrels. This wine is reminiscent of a dark chocolate cupcake with a vanilla berry coulis. “
Food Pairing Recommendations:
Pairs deliciously with a triple berry mousse or a mushroom risotto with black truffles.
Winemaking Notes:
After harvesting the grapes, the berries were gently pressed and drained to limit the skin contact. This allowed the wine to maximize the potential for the fruit and minimize the longer and harder tannins. The majority of this wine was composed of “free run” juice and contributed to the soft and rich quality of the finished wine. A very special yeast was used to enhance the fruit and structure in the wine. Most of the wine then went into barrels made of French and American oak for twelve months, while the other portion was kept in tank. Then the wine was blended at bottling.
