Pinot Noir
Appellation: Central Coast, California
Winemaker’s Tasting Notes:
“Our Pinot Noir has the aroma of cherries that carries through the palate with a touch of red currants and a hint of spice. It’s reminiscent of a cherry cupcake with currant coulis.”
Food Pairing Recommendations:
This wine pairs well with lamb kabobs, smoked sausage or mushroom risotto.
Winemaking Notes:
The pinot noir grapes were harvested at optimal ripeness and then cold soaked for a couple of days. After yeast inoculation, the juice went through a cool fermentation to preserve the bright cherry fruit. The wine was then aged in American and French oak barrels for about nine months.
